Creamy Vegetable Soup

300g potatoes or kumara

1 tomato

1/2 onion

1 garlic glove

400g mixed veges (carrots, turnip, leek)

2 sprigs parsely

1T homemade vegetable stock

600g water

20g butter

  1. Chop onions and garlic
  2. Saute onions and garlic in butter
  3. Boil water
  4. Add onion, garlic, chopped vegetables and remaining ingredients to water
  5. Cook on medium for 25mins- stirring throughout
  6. Once all veges are tender (but not sloppy) pour into blender
  7. Whizz until desired consistency

You can add any veges you have- just add more or less water for the quantity and texture you like.
