Creamy Vegetable Soup
300g potatoes or kumara
1 tomato
1/2 onion
1 garlic glove
400g mixed veges (carrots, turnip, leek)
2 sprigs parsely
1T homemade vegetable stock
600g water
20g butter
- Chop onions and garlic
- Saute onions and garlic in butter
- Boil water
- Add onoin, garlic, chopped vegetables and remaining ingrediants to water
- Cook on medium for 25mins- stirring throughout
- Once all veges are tender (but not sloppy) pour into blender
- Whizz until desired consistency
Can add any veges you have- just add more or less water for the quantity and texture you like.
