Dates (Medjool dates if possible)
Carob chocolate chips (optional)
- Combine all ingredients in a food processor.
- Pulse until the mixture begins to bind and forms a sticky mixture.
- Add more avocado or small amount of water if not sticky enough to roll
- Roll into balls
- Roll in coconut and/or chopped nuts
These sweet balls hit the spot- especially if trying to limit sugar intake and curb that 3 pm blood-sugar low. Dates are high in iron and potassium- vital for transportation of oxygen and nutrients through blood. Walnuts are high in Vitamin E- supporting cardiovascular health. They are also high in omega-3 fats which is shown to prevent cognitive decline….a great brain food! Thou these balls contain no sugar and processed foods (unless you add chocolate), they are high in good fats and energy, so limit to only 1-2 per day.
