Avocado, Red Onion and Tomato Salad
Tomatoes, Avocado, Red onion, Olive oil, herbs of choice
- Cube tomatoes, or use cherry tomatoes (halved)
- Slice red onion
- Cube avocado
- Alternate layers of these 3 ingredients, try not to toss to avoid damage to vegetable
- Drizzle Olive oil over salad
- Add salt and pepper to taste
- Add herbs of choice- coriander or basil
- Cover and allow to rest for 10-15mins
This is a great salad to use in season vegetables. The combination of these flavours is fresh, tasty and fulfilling. Use a medium-hard avocado to avoid it getting ‘squished’. Add some meat and kumara chips for a tasty and well-balanced meal.
