Avocado, Red Onion and Tomato Salad

Tomatoes, Avocado, Red onion, Olive oil, herbs of choice

  1. Cube tomatoes, or use cherry tomatoes (halved)
  2. Slice red onion
  3. Cube avocado
  4. Alternate layers of these 3 ingredients, try not to toss to avoid damage to vegetable
  5. Drizzle Olive oil over salad
  6. Add salt and pepper to taste
  7. Add herbs of choice- coriander or basil
  8. Cover and allow to rest for 10-15mins

This is a great salad to use in season vegetables. The combination of these flavours is fresh, tasty and fulfilling. Use a medium-hard avocado to avoid it getting ‘squished’. Add some meat and kumara chips for a tasty and well-balanced meal.
