Cranberry and Cashew Bliss Balls

Every 6 weeks we like to give our bootcampers’ a wee treat. This week was the mix of the beautiful flavours- cranberry, cashew and coconut. Containing no refined sugar these Bliss Balls are perfect for that mid-afternoon sugar craving or after dinner treat. Containing beneficial fats in the coconut and cashews you will feel fuller for longer plus more satisfied compared to a  sugary, processed food. They are high in energy but also full of nutrients and minerals- Almonds contain Vitamin E, a powerful antioxidant and nutrient that is great for skin. Consumption of these nuts has also been linked to reduced risk of heart disease.
3/4 cup chopped cashews,
1/4c almonds
1/2c cranberries
1/4c coconut oil, melted
1/4c coconut
2T Maple syrup (optional)
Blend nuts until finely chopped, add remaining ingredients and whizz until combined. Roll in coconut. Play with ingredients if too wet/ too dry.
 Limit to 1-2 per day……and ENJOY!
