Dr.Libby Bountylicious Slice


  • 8 medjool dates, pitted
  • 3 cups coconut, desiccated
  • 3/4 cup Coconut Oil, in liquid form
  • 1 cup cashew meal (blended cashew nuts)
  • 1 tsp Vanilla Bean Paste
  • 1 tbsp water
  • 1 pinch salt

Topping: (optional)

  • 100g Cacao Butter, melted
  • 30g cacao powder
  • 1 pinch salt
  • 1/4 cup natural maple syrup/honey/ your sweetener choice


  • Place all the ingredients for the base into a blender, do not over blend, the mixture should be slightly sticky
  • Line a 20×20 cm tin with grease-proof paper. Spoon the mixture into the tin and spread it out evenly. Place in freezer for about 10 minutes.
Chocolate Topping
  • Slowly melt the butter over low-heat.
  • Place all the ingredients in the pot and mix until smooth
  • Spread over the chilled base, then set for 10 minutes in the fridge

This is a treat! When you are needing that pick me up or feeling like a something sweet this is a great recipe due to the satiety effects of the coconut and cashew. The good fats contained in both these ingredients mean you will be left feeling satisfied and nourished.
